Salad with a Flavour Bomb Dressing

My salads are never boring! So many different flavours and textures go into one salad, and everything is gluten-free and you can get your 5 a day in one bowl.

Make a delicious salad that includes the tastes of Mexico combined with an American flavour. We will use pumpkin seeds to give the salad a fantastic crunchy component, while you hone your skills using a lemon squeezer to make the flavour bomb dressing.

Let’s make some Tex Mex Salad 🥗

This is what you will need for this recipe: 🥣🥄

Ingredients 🍅🍊

  • 1 Orange

  • 2 Tablespoons Lime juice

  • 1 Teaspoon Sugar

  • ½ Teaspoon Cumin

  • ¼ Teaspoon Salt

  • ¼ Teaspoon Pepper

  • 40g Olive Oil (3 tablespoons)

  • 1 Iceberg Lettuce Leaf

  • 50g Cherry Tomatoes (⅓ cup)

  • Frozen Corn (thawed)

  • 1 Avocado

  • ½ Red Bell Pepper

  • 90g Pumpkin Seeds (¾ cup)

  • Dried Thyme

Method 📖

  1. Juice ½ the orange and place the juice in a medium bowl.

  2. Juice the lime and add it to the bowl.

  3. Add in the sugar, cumin, salt and pepper.

  4. Whisk in the olive oil and set aside.

  5. Dice up all of the other ingredients, including your half-orange.

  6. In a large mixing bowl, toss the iceberg lettuce and add the cut-up ingredients.

  7. Pour the dressing over the salad and place it in your take-home container.

Don’t Forget! 📌

If you like, cut up some cucumber or use sunflower seeds instead of pumpkin seeds. Sometimes I use a mixture of both.
