Young chefs, why not do something different during the Pesach holidays with your mum, dad, sibling or grandma and make this delicious and versatile recipe?
This could be a fun activity during Pesach, where you can substitute breadcrumbs with matzo meal. Later in the year, serve them as a main vegetarian meal during the festival of Shavuot.
You can also use oregano or parsley instead of thyme depending on your preference….This could be your secret recipe weapon to wow your family and show off your culinary skills.

This is what you will need for this recipe:
Ingredients 🧅
2 Portabello Mushrooms
2 Tablespoons Olive Oil
½ Onion
2 Cloves Garlic
½ Teaspoon Dried Thyme
½ Teaspoon Salt
½ Teaspoon Pepper
60g Panko Breadcrumbs (9 Tablespoons)
Basil Leaves
Chives
60g Cream Cheese (8 Tablespoons)
Method 📖
Turn the oven on to 200°C (392°F)
Remove the mushroom stem, chop finely, and set aside.
Place the mushroom on a baking tray with parchment paper stem side up, as shown in the photo below.
In a frying pan, heat the oil and add the mushroom stems, onions, garlic, thyme, salt, and pepper. Saute for about 5 minutes until some liquid comes from the mushroom stems.
Sprinkle in the Panko crumbs (or Matzo meal) and mix well. Cook for about a minute.
Remove from the heat and add in the basil, chives and cream cheese. Mix well.
Stuff the mixture into the mushroom caps, heaping them on top as shown in the photo below.
Bake for about 25 minutes until the mushroom has softened and the stuffing turns golden brown.
Place onto a serving plate and serve.

Using different types of herbs can help develop flavours. Perhaps you can even try frying some curry powder with the onions and garlic to get a truly different flavour.
