This weeks tasty Pesach Sponge embodies the essence of this spring festival by infusing a citrusy zest with a light texture as an alternative delightful and yummy take on this traditional Pesach dessert.
A simple, quick and easy recipe for young chefs to follow, or make with a family member, grandparent or as an activity. The skills to to be learnt is to separate eggs, use the electric whisk along with measuring and weighing and multitasking.

Let’s Bake a Yummy Pesach Sponge!
This is what you will need for this recipe:
Ingredients 🧈🧂🥚
2 Large Eggs, Separated
60g Caster or Granulated Sugar (½ Cup)
½ Lemon
½ Tablespoon Cake Meal
1 and ½ Tablespoons Potato Flour
Vegetable Oil
Method 📖
Turn oven on to 190°C (374°F)
Crack the eggs into the small glass dish and check.
Scoop out the yolks using your hands and place them in a large mixing bowl.
Add half of the sugar with your egg yolks and mix until thick and creamy.
Grate the rind of the lemon and add to the egg yolk mixture. Add the juice of the lemon.
Whisk up the egg whites until they are very stiff. Add the rest of the sugar to the egg whites and continue whisking.
Fold the egg whites into the yolks using a spatula, and then fold in the cake meal and potato flour.
Grease the container with vegetable oil and add the mixture.
Bake for 30 minutes.
Once baked, remove from oven and allow to cool completely.
If you want to make a larger cake, just double up on the ingredients.
