A Little Nosh with a Lot of Chutzpah!

Whenever we think of Mexican food, we always say Nachos and Guacamole first! Nachos are a good way to bring in some child friendly Jalapenos, even though it is a chilli, it goes so well with Nachos.

Included here is a bonus recipe for Guacamole.

Let’s make some Nachos 🌮🧀

This is what you will need for this recipe: 🥣🥄

Ingredients 🌶️🍅🥑

Nachos
• Tortilla Chips
• 50g Crumbled Feta Cheese (¼ Cup)
• Cheddar Cheese
• ½ Can Pinto Beans
• ½ Red Pepper
• 1 Jalapeno Chilli
• 2 Spring Onions
• 1 Garlic Clove
• 2 Sundried Tomatoes
• ¼ Squeeze of Lime
• Coriander

Guacamole
1 Avocado
• Salt and Pepper
• Dried Chilli
• ½ Red Onion, diced
• Juice from ¼ of a Lime

Method 📖

1. Preheat the oven to 200°C (390°F).
2. Line a baking tray with parchment paper and spread out the tortilla chips.
3. Slice the vegetables and squeeze lime juice over them.
4. Layer the vegetables and beans evenly over the tortilla chips.
5. Top with the cheeses.
6. Bake for around 12 minutes, or until the cheese is melted and bubbling.

While the nachos are baking, make the guacamole:

1. Cut the avocado in half, remove the pit, and scoop the flesh into a small mixing bowl.
2. Mash the avocado with a fork until smooth.
3. Finely dice the red onion and mix it into the mashed avocado.
4. Season with salt, pepper, and a pinch of dried chilli.
5. Squeeze fresh lime juice over the mixture and stir until well combined.

Once the nachos are out of the oven, top with guacamole, coriander, and spring onions. Enjoy while they are hot!

Don’t Forget! 📌

Pinto beans can be replaced with kidney beans (or known as red eye beans). It is important that the Tortilla Chips are plain and unflavoured.
