Here is the second Lag B’Omer mouth-watering recipe that you can use to impress your parents and friends while soaking up the warm weather. All the more reason to spend time outside and have a Lag B’Omer BBQ!

While Dad is using the BBQ, help mum complete the meal by making some tasty sides. In this recipe, we will be using lots of chopping skills, so make sure that you have a good knife that is safe for you to use.

Perfect Potato Salad with Crunchy Spring Onions 🥔🧅

This is what you will need for this recipe: 🥣

Ingredients 🧈🧂🥚

  • 1 Large Potato or 3 New Potatoes

  • 2 Pickles

  • 2 Spring Onions

  • Pinch of Dried Parsley or Dill

  • 2 Tablespoons Ready Mayonnaise

  • Salt

  • Pepper

  • 1 Teaspoon Vegetable Oil

Method 📖

  1. Pierce the potato with a fork, put it in a pot and cover it with water

  2. Boil the potato until soft.

  3. Take the boiled potato off the heat and place it into the sink. Run cold water into the pot to cool the potato down.  Once cooled, peel the potato. If you are using New Potatoes, there is no need to peel them.

  4. Dice the potato into bite-sized pieces and add to a bowl. Mix well.

  5. Slice up the spring onion, and pickles, mix them together, and add to the potatoes.

  6. Add in the oil, mayonnaise, salt, pepper and dill or parsley.

Don’t Forget! 📌

My mother used to add some hard-boiled eggs to this recipe. You may want to do the same.

There are several different herbs that you can use if you don’t have parsley or dill. You can use chives or even basil. If you want to get really creative, add in some curry powder and some of Mrs Balls Chutney (South African brand) or equivalent.
