It takes a really long time to make honey cakes for Rosh Hashanah, so here is a recipe that is easy and quick to make and will super impress the family at Rosh Hashanah. You can make a dairy or a parve version by using slightly different ingredients.

Let’s make some Honey Cupcakes 🍯🧁

This is what you will need for this recipe: 🥣🥄

Ingredients 🍯🧁

  • 200g Plain Flour (1 Cup)

  • 1 Teaspoon Baking Powder

  • ½ Teaspoon Baking Soda

  • Pinch Salt

  • 120g Honey (¼ Cup)

  • 120g Unsalted Butter (½ Cup). Substitute with margarine for parve version.

  • 1 Large Egg

  • 100ml  Greek Yoghurt (⅓ Cup). Substitute with soya cream for parve version.

  • 1 Teaspoon Vanilla Extract

  • 100ml Milk (⅖ Cup). Substitute with soya milk for parve version.

  • Icing Sugar

Method 📖

  1. Turn oven on to 180°C (356°F).

  2. Mix flour, baking powder, baking soda, and salt in a medium bowl.

  3. Mix in the honey, add the butter and combine.

  4. Crack and check the egg and place it in a small mixing bowl.

  5. Whisk eggs, yoghurt, and vanilla extract until smooth.

  6. Add the egg mixture to the flour mixture and mix.

  7. Slowly add the milk until just combined.

  8. Fill cupcake liners until ¾ full.

  9. Bake for 18 minutes. To check that they are fully cooked, use a knife or a skewer.

  10. Remove them from the oven and let them cool.

  11. Decorate them with your favourite icing or sift icing sugar over them.

Once cooled, taste one of the cupcakes to see if it has that taste of honey for a Sweet New Year.

Don’t Forget! 📌

For a really decadent topping, combine icing sugar and butter or margarine and mix some honey into it to give a further honey flavour. If you have honeycomb, crush some on top. Perhaps I will give you a recipe to make your own honeycomb. Watch out for that in another edition!
