Let’s Cook Veronica’s Granola Bars! 🥄

This is what you will need for this recipe: 🥣

  • 230g Rolled Oats (2 and ¼ Cups)

  • 90g Coconut (1 Cup)

  • 100g Honey (4 & ¾ Tablespoons)

  • 50g Butter (3 & ½ Tablespoons)

  • 50g Light Brown Sugar (¼ Cup)

  • ½ Teaspoon Vanilla

  • ¼ Teaspoon Salt

  • 60g Chopped Dried Cranberries and Raisins (½ Cup)

Method 📖

  1. Line the baking tray with parchment paper and add the rolled oats and coconut onto it.

  2. Mix and place in an oven at 180°C/356°F for five minutes and remove.

  3. Mix the ingredients and return to the oven for another five minutes.

  4. Remove from the oven and place in a large bowl.

  5. In a saucepan, combine the butter, honey, brown sugar, vanilla extract and salt over medium heat.

  6. Stir occasionally with a wooden spoon until the butter melts.  The sugar must be completely dissolved.

  7. Pour the butter mixture into the bowl with the toasted oats and coconut.

  8. Mix well and then let it cool for a few minutes.

  9. Add the raisins, cranberries, and chocolate chips into the mixture.

  10. Place a piece of parchment paper into a shallow dish and add the mixture.

  11. Using slightly wet fingers, press the mixture down and level.

  12. Put in the fridge for two hours.

  13. Lift the parchment paper out of the shallow dish and cut the hardened mixture into bars.

A granola bar can be a nice, healthy snack to enjoy between meals.
