French Onion Soup with Home-Made Croutons 🍲

Rich and Savory French Onion Soup, Topped with Golden, Crunchy Croutons!

Onions are not a favourite thing to cut, especially for our little hands and eyes. This soup is worth crying over! After the hard work, comes the reward and you will see with just a few ingredients how wonderfully yummy this soup is. The croutons can be made quite easily by any age, with a little help with the oven.

Ingredients 🧅🧀🌿🧂

Ingredients for Soup
3 Onions
2 Tablespoons Olive Oil
1 Tablespoon Butter
1 Teaspoon Sugar
Salt, to taste
1 Garlic Clove, Crushed
• 500ml (2 Cups) Vegetable or Parve Chicken Stock
1 Bay Leaf
½ Teaspoon Thyme
Pepper, to taste
Gruyere Cheese, for garnish
Water, as needed
Ingredients for Croutons
2 Slices Bread
Olive Oil
Salt, to taste

Method 📖

1. Slice the onions and fry in 1 tablespoon of olive oil. Add the butter.
2. Add the sugar to the onions and fry for 2 minutes.
3. Add all the remaining ingredients, including herbs.
4. Mix well, add stock, and simmer for 20 minutes, stirring occasionally.
5. Preheat the oven to 180°C (350°F).
6. Cut off the crusts of the bread and cut it into small cubes.
7. Toss the bread cubes in olive oil and salt.
8. Spread the bread cubes on an oven tray in a single layer and bake for 8–10 minutes until brown and crunchy.
9. Add the croutons to the onion soup once fully cooked.
10. The onion soup will become jammy in texture. Drizzle the other tablespoon of olive oil on top before adding the croutons.
11. Grate the Gruyere cheese and add it to the soup for a rich, savoury finish.
Optional: Traditionally, white wine can be used to deglaze the pan after cooking the onions, and a splash of brandy can be added towards the end of cooking for extra depth.

You can even make a courgette soup using this recipe, minus the onions. If you have Challah left over from Shabbat, replace the ordinary bread with crispy Challah croutons.
