Chickpea Curry 🥘🧨

In the colder winter months, it is good to keep warm with a hearty curry. Although there may be a lot of chopping up for little hands, the spice blending is the most fun!

Let’s make some Chickpea Curry! 🍛🥥🌶️🍚

This is what you will need for this recipe: 🥣🥄

Ingredients 🥕🌶️🍚🥥

• ½ Can Chickpeas
• 1 Carrot
• 1 Sweet Potato
• 1 Parsnip
• 1 Courgette
• 1 Tablespoon Curry Powder
• 1 Clove Garlic
• 1cm Fresh Ginger (⅓ Inch) or Dried
• 1 Onion

• ½ Tablespoon Garam Masala
• ½ Tablespoon Turmeric
• ½ Tablespoon Paprika
• 1 Teaspoon Sugar
• 2 Tablespoons Tomato Puree
• ½ Tin Coconut Milk
• Optional Red Chilli
• Salt and Pepper
• Vegetable Oil
• ¼ Lemon (juice)
• Fresh Coriander

Method 📖

1. Slice the carrot and parsnip into rings, and cut the sweet potato and courgette into small pieces.
2. Place the vegetables in a pot, cover with water, and boil until tender. Drain and set aside.
3. Dice the onion and finely chop the garlic.
4. Sauté the onion and garlic in vegetable oil until softened.
5. In a small bowl, mix the spices, then add them to the sautéed onion and garlic.
6. Stir in the cooked vegetables, tomato puree, and sugar.
7. Pour in the coconut milk and cook gently for about 5 minutes, stirring occasionally.
8. Add salt, pepper, and a squeeze of lemon juice. Turn off the heat and let the curry rest.
9. Finely chop fresh coriander and sprinkle it on top.
10. Transfer the curry to a container and garnish with the coriander.

Serve with Basmati rice.

Don’t Forget! 📌

There are so many different vegetables you could add to this curry. You can add cauliflower, broccoli, potatoes….to name a few. You could even make this a meaty dish by adding some cooked chicken breast or even some diced beef pieces.

If you wanted to, you could even make the curry sauce on its own without any of the vegetables, and use it in a variety of different ways. The sauce can be frozen.
