Do you remember during the Lockdown in the UK when everyone was baking banana bread? We had to miss school and do everything online. Carrots and bananas go wonderfully well together, and one fruit and one vegetable can’t be too bad for your 5 a day! We can also prevent wastage by using those over-ripe bananas to make these delicious muffins. In fact, the riper the banana, the better. This recipe is a great healthy treat that you can make for breakfast or any time of the day. Shredding carrots is also a fun way to practice using the grater without cutting yourself.
Let’s bake some Carrot and Banana Muffins 🥕🍌
This is what you will need for this recipe: 🥣🥄
Ingredients🥕🍌
75g Flour (½ Cup)
½ Teaspoon Baking Powder
¼ Teaspoon Bicarbonate of Soda
¼ Teaspoon Salt
¼ Teaspoon Cinnamon
30g Sugar (2 and a ¼ Tablespoons)
15g Brown Sugar (3 and a ½ Teaspoons)
30g Butter/Margarine (2 and a ¼ Tablespoons)
1 Egg
½ Teaspoon Vanilla Extract
2 Carrots, shredded
1 Banana
30g Sunflower Seeds (3 and ½ Tablespoons)
Method 📖
Turn the oven on to 180°C/356°F
Line a muffin tin with muffin cases.
In a large bowl, weigh and stir in all the dry ingredients (flour, baking powder, bicarbonate of soda, salt, cinnamon, sugar, brown sugar) and set aside.
In another bowl, crack and check the
egg and add the egg, vanilla extract and butter or margarine.
Now mix the wet ingredients into the dry ingredients. The batter should look very thick.
Peel and shred the carrots using a box grater. Add these to the mixture.
Mash the banana in the bowl that you used for the wet ingredients and add to the batter. Add in the sunflower seeds.
Ensure that you do not overmix them.
Add the batter to the muffin cases.
Bake for 18 minutes.
Excellent for a decadent breakfast!
Don’t Forget! 📌
This is the very healthy version of the muffins, but if you want to make this into a sweet treat, you can add some frosting to it. I would suggest that you make the frosting with 50g of butter or margarine, a squeeze of an orange (half an orange should be sufficient), 50 to 70g of icing sugar and 100g Cream Cheese or Violife Spread if you want it to be parve. Mix these very well and then frost your cupcakes with this frosting.
